I love all things healthy and natural, and that is mainly what you will find on my blog – as you do right here on Hello Healthy Eating.
But let’s get to the post shall we? I’m so exited!
When did you begin blogging and what is the goal of your blog?
I started blogging two years ago without having any kind of idea on what my exact goal was. It was quite spontaneous actually. The only thing I knew was that I loved cooking, crafting and writing. What I didn’t knew was that starting a blog would take me on an adventure, which both led to new interests and a lot more knowledge about food and health.
In the meantime my blog has changed a lot. I don’t craft a lot (though I love it when I have the time). Instead I like to spend time on my new hobby: Photography. And the cooking has gone from ordinary foods to healthy, natural, un-processed and partly vegetarian foods.
My goal today is to be good at food photography and to keep exploring new ways of healthy eating – and in the end find a more specific path on how I want to eat. It could end up being everything from paleo to vegetarian – I still don’t know.
Throughout your blog you have different gluten free, grain free, dairy free and paleo options… what is your “eating philosophy”?
As abovementioned I still don’t have a specific way of eating. There are so many different diets to choose from. One day the media says vegetarian is the best and other days it is best to live from almost nothing but meat.
I don’t however think I am ever going to go completely paleo or vegan etc. I have a totally different philosophy:
I think that eating healthy means eating natural unprocessed foods – only foods which nature has given us. I try to avoid unnatural sweeteners and white sugar (I kind of lack a sweet tooth, but when I have to sweeten something I use honey or agave), I eat a lot of vegetables, fruits and nuts and I try eating as less grains as possible (and I never have potatoes).
I have plain low-fat yoghurt for breakfast every single day (and often for a evening-snack as well). I really love that stuff and my morning just isn’t complete without it.
When I’m in school lunch is typically chicken with vegetables or a whole wheat sandwich. On the weekends I enjoy either the Danish kind of bread, rye bread (which I’ll talk about further down) or I make something completely different. Like healthy avocado pudding or XXX, which can both be found on my blog.
I also eat a lot of fruit and I don’t think a day has ever gone by without I’ve eaten at least one carrot.
For proteins I prefer chicken or fish, and this is what I usually have.
Everyone loves to treat themselves to something sweet every once in a while, what is your favorite splurge/ treat?
My all-time favorite sweet treat is ice cream (or sorbet or frozen yoghurt). I love the combination of sweet and cold and the fact that you can get so many different kinds of ice cream. I really love making it myself as well – then you can even healthy-fy them 😉 There are endless possibilities.
I also really love healthy homemade energy-balls/ confectionery made from dried fruits, nuts and different spices. I have a couple of recipes on the blog. One of them is the recipe, which I’ve chosen to include in this post. My favorite so far.
I have quite a lot of interests, but I think the one I use most time on is cooking (obviously). I love to make healthy food for my family and friends and I really enjoy making my own recipes.
I also love all sorts of sport (as long as no ball is included). Mostly I run, but until 3 weeks ago I spend a lot of time dancing ballet. I’ve been dancing since I was four, but 3 weeks ago I made a big decision; I decided to take a break. It is still quite weird, but it gives me more time for cooking, photographing, running, walking my dog and being together with my friends and family.
In terms of maintaining a regular exercise routine, what are some tips you have?
When it comes to exercise routines I think it is a good idea to have a “rule” for what is the longest time you’ll allow between workouts. I work out at least every other day for instance. But I also think it is important to be a little “relaxed” about workouts. If you are stressed or busy it is totally okay not to go for the long workouts. That’ll only make you even more stressed. A short run can also be good – and maybe even make you less stressed.
What are some of the exercise plans and routines that you follow?
I don’t have a specific plan, no. Right now I’m just enjoying that I can workout whenever I want as opposed to when I danced ballet. I do, however, (as abovementioned) run at least every other day and I do a little strength training at home approx. every other day as well.
How do you prevent stress with schooling, blogging and other various activities you are involved in?
I’m one of those people who likes things to be in order. I’m a little OCD when it comes my schoolwork and papers, the kitchen and sometimes my room. I used to be quite stressed, but then I figured that if I just keep things around me in order I’m immediately more relaxed.
The thing that stresses me most is schoolwork. I want it to be done properly and I’ve never handed in a paper too late. A great tip, which I find very useful, is to do as much homework for the week as you can on the weekend. This makes your weekdays way easier to get through.
Lastly, what is your favorite Danish food/ dish?
I can choose two right? 😉 Haha, I really like Nordic food.
My first favorite Danish food is definitely rye bread – a special, very dark kind of loaf made with sourdough, whole wheat and a ton of seeds and kernels. I don’t eat a lot of bread, but I really love this kind. At this point I’m very Danish. I love travelling and I like usual whole wheat bread, but whenever I go out travelling I always miss rye bread. You just can’t get bread as whole wheat as rye bread.
Also I love the Danish dessert “Rød Grød med Fløde” meaning “Red Porridge with Cream”. It is like a thick sauce made from raspberries, strawberries and red currant with vanilla topped with either cream or milk – but I’m strange and prefer it plain (without any topping). A good old “grandmother-dessert”. (I think I have to make up a healthy recipe for the blog BTW).
This recipe is my favourite sweet snack – healthy oatmeal balls. Oatmeal balls are a Danish kind of sweet snack, which almost everybody enjoys around Christmas. And they taste heavenly. But despite the name they are very unhealthy – loads of butter and sugar. So I wanted to make my own version – just healthy. So here it is. Super healthy and very easy to make. I hope you like it!
Ingredients
· ¼ cup almond butter
· 3. tbsp. agave
· ½ tsp. coarse salt
· ¼ cup cocoa powder
· ½ cup old fashioned oatmeal (preferably gluten free)
In a bowl mix together almond butter, agave and salt.
Stir in the cocoa and then the oatmeal.
Roll into small balls and refrigerate for 15 minutes in an airtight container.
Enjoy!
Store in an airtight container in the fridge for up to a week.
