Saturday Superfoods: Spinach

Spinach!… lovely, leafy, deep green spinach!   Spinach doesn’t always get the love and respect that it deserves.  I love it!  In fact, most of my smoothie recipes include it as a key ingredient, but I have not yet written about how wonderful it is for your body.

Spinach is truly a “superfood”.  It is a powerhouse of nutrients!  Spinach is probably one of the best foods out there!  And there are actually so many ways to enjoy it.  For breakfast, you can blend it into a smoothie or sauté it into an omelet.  For lunch, you can enjoy a fresh spinach and strawberry salad with grilled chicken or steamed salmon.  At dinner, spinach can be enjoyed as a steamed side or even wilted into whole wheat or brown rice pasta!  And if you’re really adventurous you can add spinach puree to your brownies!  I’ve never done it… but I’ve seen recipes, and many happy, healthy people seem to have tried it and liked it.

Anyway, let’s get back to the benefits of spinach!  According to Super Foods RX, spinach has been connected to reduced risk of various cancers, age causing macular degeneration, cataracts and various kinds of cardiovascular diseases; including coronary artery disease and stroke.  I don’t know about you, but if these dangerous diseases and ailments can be prevented, or at least minimized, then I’m eating it up!  Seriously, how amazing is it that something so humble, natural, and inexpensive like spinach, can have such extraordinary results?!

And while these benefits may require years of eating spinach (along with a balanced diet and maintaining a regular exercise routine), I’ll take what I can get!  Besides, spinach has some other benefits as well!  According to my fave nutritionist, Kimberly Snyder, spinach is actually a beauty food!  It specifically aids in creating youthful skin.  It has iron to keep the blood flow regular within the body.  It’s also filled with beta-carotene!  Once inside the body, beta-carotene is converted to vitamin A which helps to refresh the skin cells within your body, once again… keeping the skin young and glowing!!

If these aren’t reasons enough to eat more spinach, try a new recipe using this humble super food!  You’ll be shocked at how versatile it is!  Health and beauty benefits aside, you’ll want more!!
