Cucumbers are amazing!  Don’t you agree?

I have to confess, I wasn’t always such a fan of these long, shiny, green veggies…I was actually a bit turned off by their thick, bitter skin.  But then I found out that the silica in the skin actually promotes the health and quality of your hair!  Who doesn’t love healthy hair?  In addition to being amazing for your hair, cucumbers are 95% water so they’re super hydrating!  The high water content, along with the fiber content, make cucumbers a superfood for weight loss, as well as a detoxifying agent for the body.  Their fiber content also promotes healthy digestion.  The silica in cucumbers helps with joint health!  Seriously, cucumbers are loaded with crucial vitamins and minerals, including; vitamin A, B1, B6, C & D, Folate, Calcium, Magnesium, and Potassium!

So go ahead!  Enjoy cucumbers!  My favorite ways to eat them are in a salad, in a cucumber melon detox smoothie, or with salsa!  Try replacing traditional fried corn chips with fresh, crisp cucumbers and you will save a ton of calories and fat!  Hope you have a happy, healthy day!!
